Best. Spinach. Dip. Evah.

You can make this with fresh or frozen spinach. Either way, make sure to wring out excess water otherwise your dip will be sad.

8 oz cream cheese, softened

1 cup sour cream

10 oz fresh spinach or 12 oz frozen chopped spinach, defrosted

1 tsp minced garlic

1/2 tsp salt

1/4 tsp pepper

1/2 cup shredded mozzarella cheese, divided

1 TB chopped parsley


If using fresh spinach, steam or sauté it until wilted. Let cool, wring out the excess water, and coarsely chop it.

If using frozen, chopped spinach, defrost it and wring out the excess water.

Preheat oven to 375 degrees F. Coat a small baking dish with cooking spray.

Place cream cheese, sour cream, spinach, garlic, salt, pepper, parmesan cheese and 3/4 cup mozzarella cheese in a bowl and mix well until combined.

Spread the spinach mixture into the prepared dish and top with the remaining mozzarella.

Bake for 20 minutes until bubbly and the cheese is melted. Turn oven to broil and cook for a few more minutes until the cheese starts to brown. DO NOT WALK AWAY WHILE THIS IS HAPPENING.

Sprinkle with parsley and serve with crusty bread or crackers or whatever you feel like dipping. I won't judge.
